Method
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a skillet. Add diced onion and minced garlic, sauté until translucent.
- Add chopped spinach to the skillet and cook until wilted. Set aside to cool slightly.
- In a large bowl, whisk together the eggs, cottage cheese, mozzarella (if using), Parmesan, salt, and pepper.
- Fold in the spinach mixture until well combined.
- Pour the mixture into a greased baking dish. Spread evenly.
- Bake for 30–35 minutes, or until the top is golden and the eggs are fully set.
- Let cool slightly before slicing. Serve warm.
Notes
Try adding herbs like dill or parsley, or mix in roasted red peppers or sun-dried tomatoes for extra flavor.
