  • 10 large eggs
  • 1 1/2 cups cottage cheese
  • 4 cups fresh spinach chopped
  • 1/2 cup shredded mozzarella optional
  • 1/4 cup grated Parmesan
  • 1 small onion diced
  • 2 cloves garlic minced
  • salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet. Add diced onion and minced garlic, sauté until translucent.
  3. Add chopped spinach to the skillet and cook until wilted. Set aside to cool slightly.
  4. In a large bowl, whisk together the eggs, cottage cheese, mozzarella (if using), Parmesan, salt, and pepper.
  5. Fold in the spinach mixture until well combined.
  6. Pour the mixture into a greased baking dish. Spread evenly.
  7. Bake for 30–35 minutes, or until the top is golden and the eggs are fully set.
  8. Let cool slightly before slicing. Serve warm.

Notes

Try adding herbs like dill or parsley, or mix in roasted red peppers or sun-dried tomatoes for extra flavor.
