  • 2 tablespoons honey mild-flavored or local honey

Method
 

  1. Peel and slice the carrots into evenly sized sticks or rounds, about ¼ to ½ inch thick.
  2. Melt butter in a medium skillet over medium heat until slightly bubbling.
  3. Add the carrots and stir to coat with the melted butter.
  4. Drizzle honey over the carrots and stir gently until evenly glazed.
  5. Season with a pinch of salt and a dash of black pepper to taste.
  6. Cover the skillet and reduce heat to medium-low. Simmer for 8–10 minutes, stirring once or twice, until carrots are tender.
  7. Uncover and raise heat slightly to reduce and thicken the glaze for 1–2 minutes.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

Try adding a pinch of cinnamon or nutmeg for a warm twist. You can also use baby carrots if you’re in a hurry—just watch cooking time to avoid mushiness.
