- In a bowl, combine chicken, yogurt or olive oil, garlic, cumin, coriander, paprika, turmeric, cinnamon (if using), salt, and pepper. Mix well and let marinate for 15–20 minutes.
- Heat a skillet over medium-high heat. Add the chicken and cook in a single layer for 3–4 minutes. Stir and cook for another 2–3 minutes until cooked through and slightly charred.
- Warm pita or flatbreads in a dry skillet or wrap in foil and warm in the oven.
- To make the sauce, mix yogurt, garlic, lemon juice, and a pinch of salt until smooth.
- To assemble, place chicken on pita, add onion, tomato, greens, optional veggies, and drizzle with sauce. Fold or roll tightly.
- Cut sandwich in half if desired, and serve with extra sauce or a side salad.
Notes
Customize your sandwich with different sauces, veggies, or protein substitutes. Leftover chicken stores well and makes a quick lunch the next day!
