  • 1 lb lean ground beef or ground turkey
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 15 oz, with green chiles optional
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can pinto beans 15 oz, drained and rinsed
  • 1 cup frozen corn
  • 4 cups beef broth or chicken broth
  • 1 packet taco seasoning or 2 tbsp homemade seasoning
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • salt and pepper to taste
  • 1/2 cup sour cream or Greek yogurt for creaminess

  • avocado slices
  • chopped cilantro

Method
 

  1. In a large pot over medium heat, cook ground beef until browned. Drain excess fat if necessary.
  2. Add chopped onion and garlic. Sauté until onion is translucent, about 2–3 minutes.
  3. Stir in taco seasoning, cumin, paprika, salt, and pepper. Cook for 1 more minute.
  4. Add tomatoes, black beans, pinto beans, corn, and broth. Bring to a boil, then reduce heat to simmer and cover. Simmer for 15 minutes.
  5. Remove from heat and stir in sour cream or Greek yogurt until fully combined and creamy.
  6. Serve hot with your choice of toppings like cheddar, tortilla chips, avocado, or cilantro.
