- Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon.
- Add onions, garlic, carrots, and celery. Sauté until onions are soft and fragrant, about 5 minutes.
- Stir in zucchini, cabbage, and bell pepper. Cook for another 2–3 minutes.
- Add chicken broth, diced tomatoes, thyme, salt, and pepper. Stir and bring to a boil.
- Reduce heat and simmer uncovered for 20–25 minutes, or until vegetables are tender.
- Optional: Add a splash of lemon juice before serving. Garnish with parsley and serve hot.
Notes
This soup is excellent for meal prep and freezes beautifully. Customize it with your favorite veggies or add quinoa for extra fiber and protein.
