Ingredients
  

Filling
  • 1 lb ground beef or turkey
  • 1 can black beans drained
  • 1 cup frozen corn
  • 1 onion diced
  • 1 bell pepper any color, diced
  • 1 can diced tomatoes with green chilies
  • 1 tbsp chili powder
  • 1 tsp cumin
  • salt & pepper to taste
  • 1 cup shredded cheddar cheese
Cornbread Topping
  • 1 box cornbread mix plus ingredients listed on box

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef with diced onions and bell peppers until meat is browned and vegetables are softened.
  3. Add black beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Stir to combine and simmer briefly.
  4. Transfer mixture to a baking dish and spread evenly. Top with shredded cheddar cheese.
  5. Prepare cornbread mix as instructed on the box. Pour or spread the batter over the meat and cheese layer.
  6. Bake for 20–25 minutes, or until cornbread is golden and cooked through.
  7. Let casserole rest for 5–10 minutes before serving.

Notes

Try adding jalapeños, olives, or sour cream for extra flavor. Make it vegetarian by swapping the meat with more beans or plant-based crumbles.
