Method
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides for 4–5 minutes until golden brown and nearly cooked through.
- Reduce the heat to medium. Push the chicken to one side and add minced garlic. Sauté for 30 seconds until fragrant, then pour in wine or broth and deglaze the pan.
- Add halved cherry tomatoes and dried oregano. Stir and simmer for 2–3 minutes until tomatoes soften and sauce slightly reduces.
- Stir in butter and torn basil. Let the chicken cook for another 1–2 minutes until fully cooked and coated in sauce.
- Serve hot with sauce spooned over the top and optional grated Parmesan. Enjoy!
