Ingredients
  

Cilantro Lime Marinade
  • 1/4 cup fresh lime juice plus zest of 1 lime
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 2 tbsp fresh cilantro finely chopped
  • 1 tbsp honey or maple syrup
  • 1 tsp salt
  • 1/2 tsp black pepper
Chicken
  • 4 pieces boneless chicken breasts or thighs

Method
 

  1. In a medium bowl, whisk together lime juice, zest, olive oil, garlic, cumin, cilantro, honey, salt, and pepper.
  2. Place the chicken in a resealable bag or bowl. Pour the marinade over it and mix to coat well. Marinate for at least 30 minutes, or overnight for best flavor.
  3. Cook the chicken by grilling, baking at 400°F (204°C) for 20–25 minutes, or pan-searing until fully cooked and golden.
  4. Optional: Simmer leftover marinade for 3 minutes to create a glaze. Drizzle over cooked chicken.
  5. Garnish with extra cilantro and lime wedges. Serve with rice, veggies, or tortillas.

Notes

This marinade also works great with shrimp, tofu, or vegetables. Leftovers are perfect for tacos, salads, or wraps.
