- Heat olive oil in a large pot over medium heat. Add garlic and sauté until fragrant.
- Add sliced chicken sausage and cook until lightly browned.
- Pour in chicken broth and bring to a simmer.
- Stir in sun-dried tomatoes, oregano, thyme, and chili flakes.
- Add gnocchi and spinach (or kale) and let simmer for 8–10 minutes until gnocchi are soft.
- Reduce heat and stir in light cream. Simmer for another 2–3 minutes until slightly thickened.
- Sprinkle with parmesan cheese and Italian seasoning before serving. Taste and adjust seasoning as needed.
Notes
Make it vegetarian by using veggie broth and swapping sausage for mushrooms or white beans. Reheats well with a splash of broth!
