  • 4 cups carrots peeled and sliced
  • 3 tbsp butter
  • 3 tbsp brown sugar light or dark
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup water or broth as needed for softening carrots
  • 1 tbsp honey optional, for extra shine

Method
 

  1. Peel and slice the carrots, then simmer them in water or broth over medium heat until soft, about 10-15 minutes.
  2. In a separate pan, melt butter over medium heat. Add brown sugar and stir until dissolved.
  3. Add cinnamon and salt to the brown sugar mixture. Stir to combine.
  4. Add the drained carrots to the glaze. Stir to coat and simmer for 5 minutes until the glaze thickens and the carrots are glossy.
  5. Optionally, drizzle with honey before serving for extra shine. Serve warm.

Notes

You can roast the carrots instead of boiling them, or reheat them the next day for an even richer flavor. Reduce sugar if you prefer a lighter glaze.
