Method
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the strawberry cake mix, eggs, and oil until the dough is smooth and slightly sticky.
- Fold in the white chocolate chips and crushed freeze-dried strawberries (if using).
- Use a cookie scoop or spoon to drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
- Bake for 8–10 minutes until the edges are firm and the centers are soft.
- Cool on the pan for 5 minutes, then transfer to a wire rack to finish cooling.
Notes
Don't overmix the dough to keep cookies soft. Try adding chocolate drizzle or ice cream for extra indulgence!
