  • 1.5 lb sirloin or rib-eye steak cut into bite-sized cubes
  • 1.5 lb baby potatoes or small red potatoes halved
  • 2-3 Tbsp olive oil for the potatoes
  • salt and fresh-ground black pepper
  • 2 Tbsp butter for the steak bites
  • 3 cloves garlic minced
  • 1 Tbsp fresh thyme or rosemary optional
  • 1 Tbsp chopped fresh parsley for garnish
  • lemon juice optional, a squeeze over steak before serving

Method
 

  1. Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, salt, and pepper. Arrange cut-side down on a baking sheet and roast for 20–25 minutes.
  2. While potatoes roast, heat a skillet over medium-high heat. Add butter and let it melt and foam.
  3. Add steak bites in a single layer (don’t overcrowd). Season with salt and pepper. Sear for about 2 minutes per side for medium-rare.
  4. About 30 seconds before steak is done, add minced garlic and herbs. Toss to coat without burning the garlic.
  5. Transfer roasted potatoes to a serving dish. Top with steak bites and garlic butter. Garnish with parsley and a squeeze of lemon if desired.

Notes

To make it even faster, use pre-cut steak or pre-boiled potatoes. Store leftovers separately and reheat gently in a skillet with butter for best flavor.
