- Heat a skillet over medium heat. Add ground beef, salt, pepper, and garlic powder. Cook until browned, breaking it up as it cooks (about 6–8 minutes).
- Lay a tortilla flat. Sprinkle cheese over one half, then top with cooked beef and optional toppings like onions, pickles, or ketchup. Fold tortilla in half.
- Place the quesadilla in a skillet over medium heat. Cook for 2–3 minutes per side until golden and the cheese is melted. Repeat for remaining quesadillas.
- Slice into wedges and serve warm with dipping sauces if desired.
Notes
To reheat: use a skillet or air fryer for best results. For freezer storage, wrap tightly and freeze up to 1 month. Feel free to use ground turkey or plant-based meat for variations!
