  • 1 lb smoked sausage sliced
  • 2 cans white beans drained and rinsed
  • 1 can diced tomatoes
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 cups chicken broth
Seasoning
  • 1 tsp paprika
  • 1 tsp dried thyme
  • salt to taste
  • black pepper to taste

Method
 

  1. Slice the smoked sausage and chop the onion, garlic, and carrots.
  2. Add the sausage, beans, diced tomatoes, onion, garlic, carrots, and chicken broth into the slow cooker.
  3. Sprinkle in paprika, thyme, salt, and pepper.
  4. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  5. Taste and adjust seasoning before serving.

Notes

For extra flavor, brown the sausage before adding it to the slow cooker. You can also add greens like spinach at the end or swap beans and sausage types to suit your taste.
