Ingredients
  

Main Ingredients
  • 1 lb sausage chicken, turkey, or pork; sliced or crumbled
  • 2 bell peppers any color, chopped
  • 1 zucchini or yellow squash, sliced
  • 2 carrots sliced or diced
  • 1 can diced tomatoes or crushed tomatoes
  • 2 cloves garlic minced
  • 1 onion chopped
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 2 cups broth chicken or vegetable
To Finish
  • 2 cups pasta any shape that holds sauce well, uncooked
  • 2 cups spinach or kale fresh

Method
 

  1. Layer chopped vegetables (peppers, zucchini, carrots, onion) at the bottom of the slow cooker.
  2. Place sliced or crumbled sausage on top of the vegetables.
  3. Pour in diced tomatoes, broth, garlic, olive oil, and Italian seasoning.
  4. Cook on LOW for 6–7 hours or HIGH for 3–4 hours until vegetables are tender and sausage is fully cooked.
  5. 30 minutes before serving, stir in uncooked pasta. Let it cook in the slow cooker until tender.
  6. Just before serving, fold in spinach or kale until wilted. Serve hot.

Notes

Feel free to adjust veggies based on what's in your fridge. For a creamier version, stir in cream cheese or heavy cream at the end.
