Method
- Layer chopped vegetables (peppers, zucchini, carrots, onion) at the bottom of the slow cooker.
- Place sliced or crumbled sausage on top of the vegetables.
- Pour in diced tomatoes, broth, garlic, olive oil, and Italian seasoning.
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours until vegetables are tender and sausage is fully cooked.
- 30 minutes before serving, stir in uncooked pasta. Let it cook in the slow cooker until tender.
- Just before serving, fold in spinach or kale until wilted. Serve hot.
Notes
Feel free to adjust veggies based on what's in your fridge. For a creamier version, stir in cream cheese or heavy cream at the end.
