Ingredients
  

  • 4 boneless, skinless chicken breasts or thighs for extra juiciness
  • 1.5 pounds baby potatoes halved
  • 4 cloves garlic minced
  • 0.5 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp black pepper
  • 0.5 tsp salt adjust to taste
  • 0.25 cup olive oil
  • 1 cup chicken broth

Method
 

  1. Place halved baby potatoes at the bottom of the slow cooker.
  2. Sprinkle minced garlic over the potatoes. Pour olive oil and chicken broth evenly over them.
  3. Place chicken breasts on top of the potatoes.
  4. Season chicken with parmesan, oregano, basil, salt, and pepper.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  6. Optional: Add a splash of cream or sprinkle more parmesan before serving.

Notes

To make this dish your own, add vegetables like baby carrots or green beans in the last hour. For a crispy finish, broil the cooked dish for a few minutes.
