  • 4 boneless, skinless chicken breasts (or thighs)
  • 1/2 cup honey
  • 4 cloves garlic minced
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1 tbsp ginger minced, optional
  • salt and pepper to taste

Method
 

  1. Place the chicken breasts or thighs in the slow cooker.
  2. In a bowl, whisk together the honey, garlic, soy sauce, ketchup, and optional ginger until well combined.
  3. Pour the sauce over the chicken, ensuring it is evenly coated.
  4. Cover and cook on low for 4–6 hours or on high for 2–3 hours, until the chicken is fully cooked and tender.
  5. Once done, shred the chicken with two forks and stir to coat with the sauce. Serve warm over rice, noodles, or vegetables.

Notes

For a thicker sauce, remove 1 cup of the sauce near the end of cooking and reduce it in a pan on the stove before returning it to the slow cooker. Add lemon juice or red pepper flakes for extra brightness or heat.
