- Place the chicken breasts or thighs in the slow cooker.
- In a bowl, whisk together the honey, garlic, soy sauce, ketchup, and optional ginger until well combined.
- Pour the sauce over the chicken, ensuring it is evenly coated.
- Cover and cook on low for 4–6 hours or on high for 2–3 hours, until the chicken is fully cooked and tender.
- Once done, shred the chicken with two forks and stir to coat with the sauce. Serve warm over rice, noodles, or vegetables.
Notes
For a thicker sauce, remove 1 cup of the sauce near the end of cooking and reduce it in a pan on the stove before returning it to the slow cooker. Add lemon juice or red pepper flakes for extra brightness or heat.
