Chicken
  • 6 bone-in chicken thighs
Vegetables
  • 4 potatoes chopped
  • 3 carrots sliced
  • 1 onion diced
  • 3 cloves garlic minced
Liquid
  • 1 cup chicken broth
  • 2 tablespoons olive oil
Seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • green beans or mushrooms (optional)

Method
 

  1. Chop the potatoes, carrots, onion, and garlic to prepare the vegetables.
  2. Place the potatoes, carrots, and onion in the bottom of the slow cooker.
  3. Season the chicken thighs with paprika, thyme, salt, and pepper.
  4. Place the seasoned chicken thighs on top of the vegetables.
  5. Pour in the chicken broth and olive oil over the ingredients.
  6. Cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and fully cooked.
  7. Serve hot, spooning the juices over the chicken and vegetables for extra flavor.
