Method
- Season the beef with salt and pepper.
- Heat a skillet over medium-high heat and sear the roast on all sides, 3–4 minutes per side.
- Place carrots, celery, onion, and garlic at the bottom of the slow cooker.
- Add the seared beef on top. Pour in the beef broth, tomato paste, rosemary, thyme, and bay leaves.
- Cook on low for 8–10 hours or high for 5–6 hours, until beef is tender.
- Remove bay leaves, let the roast rest for 10 minutes, then serve with vegetables and gravy.
Notes
For a thicker gravy, remove 1 cup of liquid, simmer with 1 tbsp cornstarch on the stove, then stir back in.
