Ingredients

  • 3–4 pounds beef chuck roast
  • 4 large carrots cut into chunks
  • 3 celery stalks sliced
  • 1 large onion quartered
  • 4–5 cloves garlic minced
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp rosemary
  • 1 tsp thyme
  • salt and pepper to taste
  • 2 bay leaves

Method
 

  1. Season the beef with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the roast on all sides, 3–4 minutes per side.
  3. Place carrots, celery, onion, and garlic at the bottom of the slow cooker.
  4. Add the seared beef on top. Pour in the beef broth, tomato paste, rosemary, thyme, and bay leaves.
  5. Cook on low for 8–10 hours or high for 5–6 hours, until beef is tender.
  6. Remove bay leaves, let the roast rest for 10 minutes, then serve with vegetables and gravy.

Notes

For a thicker gravy, remove 1 cup of liquid, simmer with 1 tbsp cornstarch on the stove, then stir back in.
