  • 200 g shrimp peeled and deveined
  • 150 g noodles egg or rice noodles, cooked until al dente
  • 1 tbsp oil for cooking
  • 1 cup mixed vegetables e.g., bell peppers, carrots, broccoli
Sauce
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp brown sugar or honey
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • red pepper flakes or sriracha optional, for heat

Method
 

  1. Heat oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink, about 2 minutes per side. Remove and set aside.
  2. Add a bit more oil to the pan. Stir-fry the vegetables until just tender.
  3. Add garlic and ginger, stir for 30 seconds until fragrant.
  4. Add cooked noodles and return the shrimp to the pan.
  5. Pour in soy sauce, sesame oil, and brown sugar or honey. Add chili flakes if using. Toss everything to coat evenly.
  6. Cook for 2–3 more minutes until everything is heated through. Serve immediately with optional garnishes like lime, sesame seeds, or scallions.

Notes

Customize with your favorite veggies or proteins like chicken or tofu. Cook shrimp just until pink to avoid rubbery texture. Leftovers keep well for up to 3 days in the fridge.
