Ingredients
  

Salmon and Vegetables
  • 4 salmon fillets
  • 2 cups broccoli florets
  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 1 small red onion wedged
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lemon sliced
  • salt and black pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Spread the vegetables on the sheet pan, drizzle with olive oil, add garlic, salt, and pepper, and toss to coat evenly.
  3. Roast the vegetables for 10 minutes to give them a head start.
  4. Remove the pan from the oven and nestle the salmon fillets among the vegetables. Season the salmon and top with lemon slices.
  5. Return the pan to the oven and roast for 10–12 minutes, until the salmon is flaky and the vegetables are tender.

Notes

This recipe is highly flexible. Swap vegetables based on what you have on hand or add spices like paprika, chili flakes, or herbs for extra flavor.
