Chocolate Loaf Cake
  • 1/2 cup unsalted butter melted
  • 1/2 cup cocoa powder high-quality
  • 1 cup sugar
  • 2 eggs room temperature
  • 1/4 cup Baileys Original Irish Cream
  • 1/4 cup strong coffee or espresso
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
Baileys Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1 1/2 cups powdered sugar
  • 2 tbsp Baileys Original Irish Cream

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Melt the butter and whisk in cocoa powder. Stir in sugar and eggs until smooth.
  3. Add Baileys and espresso to the mixture and stir well.
  4. Gently fold in flour, baking powder, and salt until just combined. Do not overmix.
  5. Pour batter into the prepared loaf pan and bake for 50–55 minutes or until a toothpick comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting: Beat cream cheese until smooth, add powdered sugar and Baileys, and whip until fluffy.
  8. Spread the frosting generously over the cooled cake. Decorate as desired.

Notes

For best results, chill the frosted loaf cake for 30 minutes before slicing. Decorate with chocolate curls or berries for an elegant finish.
