Pumpkin Custard
  • 4 eggs
  • 1 cup milk or cream
  • 1/2 cup pumpkin purée
  • 2 tbsp maple syrup
  • 2 tsp pumpkin pie spice

  • 2 tbsp butter for cooking

Method
 

  1. Cut bread into 1-inch cubes and place in a large mixing bowl.
  2. In another bowl, whisk together eggs, milk, pumpkin purée, maple syrup, and pumpkin pie spice until smooth.
  3. Pour the pumpkin mixture over the bread cubes and gently toss until evenly coated. Let sit for 5–10 minutes to absorb.
  4. Heat butter in a nonstick skillet or griddle over medium heat. Cook soaked bread cubes in batches, turning until all sides are golden brown and crisp.
  5. Serve warm with maple syrup, powdered sugar, or your favorite toppings.
  6. Air Fryer Option: Arrange coated bread cubes on parchment paper in an air fryer basket. Air fry at 350°F (175°C) for 8–10 minutes, shaking halfway through.

Notes

Use slightly stale bread for best results. You can prep the mixture the night before for a quicker morning meal. These bites freeze well – just reheat in the air fryer or toaster oven for a warm, crispy treat.
