  • 1 lb smoked sausage sliced
  • 3 cups dry pasta penne or rotini recommended
  • 1 can diced tomatoes 14 oz with juices
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese for serving
  • fresh parsley for garnish

Method
 

  1. Heat olive oil over medium heat in a large pot.
  2. Add the sliced smoked sausage and cook until browned, about 5 minutes.
  3. Stir in the diced onion and garlic, cooking until soft and fragrant.
  4. Pour in the chicken broth and diced tomatoes (with juices).
  5. Add the dry pasta, Italian seasoning, salt, and pepper. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
  7. Stir in the heavy cream until the sauce becomes rich and creamy.
  8. Taste and adjust seasoning. Serve hot with grated Parmesan and fresh parsley.

Notes

You can customize this dish with mushrooms, bell peppers, or extra garlic. For extra richness, stir in mozzarella cheese before serving.
