Method
- Heat a large skillet over medium-high heat and add olive oil. Add sausages and brown on all sides for 5–7 minutes.
- Remove sausages, slice into bite-sized pieces, and set aside.
- In the same pan, add sliced onions and bell peppers. Sauté for 4–5 minutes until they begin to soften.
- Add minced garlic and cook for 1 more minute, stirring constantly.
- Return sliced sausage to the pan. Season with oregano, basil, salt, pepper, and optional red pepper flakes. Stir to combine.
- Lower heat, cover, and simmer for 5 minutes to blend flavors. Taste and adjust seasoning before serving.
Notes
Serve with pasta, rice, polenta, or in warm hoagie buns. For a cheesy twist, top with shredded mozzarella and broil for 2–3 minutes.
