  • 1 pound Italian sausage mild or hot
  • 3 bell peppers red, yellow, green; sliced
  • 1 onion large, sliced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt and black pepper to taste
  • red pepper flakes optional, for heat

Method
 

  1. Heat a large skillet over medium-high heat and add olive oil. Add sausages and brown on all sides for 5–7 minutes.
  2. Remove sausages, slice into bite-sized pieces, and set aside.
  3. In the same pan, add sliced onions and bell peppers. Sauté for 4–5 minutes until they begin to soften.
  4. Add minced garlic and cook for 1 more minute, stirring constantly.
  5. Return sliced sausage to the pan. Season with oregano, basil, salt, pepper, and optional red pepper flakes. Stir to combine.
  6. Lower heat, cover, and simmer for 5 minutes to blend flavors. Taste and adjust seasoning before serving.

Notes

Serve with pasta, rice, polenta, or in warm hoagie buns. For a cheesy twist, top with shredded mozzarella and broil for 2–3 minutes.
