Method
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Squeeze excess water from the spinach (especially if using frozen), and place in a mixing bowl.
- Add crumbled feta, beaten eggs, olive oil, garlic, herbs, and black pepper to the bowl. Mix well to combine.
- Scoop tablespoon-sized portions onto the baking sheet. Flatten each slightly with the back of the spoon.
- Bake for 18–20 minutes, or until golden brown and crisp around the edges.
- Let cool slightly before serving. Enjoy warm or at room temperature.
Notes
For extra flavor, try mixing in chopped olives or sun-dried tomatoes. Serve with tzatziki or yogurt sauce as a dip. Can be stored in the fridge for up to 3 days.
