- Heat olive oil in a large skillet over medium-high heat. Add the onion and garlic, and cook until fragrant.
- Add ground beef to the skillet. Break it up with a spatula and cook until browned and fully cooked through.
- Drain any excess fat if needed. Add sliced bell pepper and zucchini. Stir and cook for 3–4 minutes until the vegetables start to soften.
- Sprinkle in the oregano, paprika, salt, and pepper. Stir well to coat the beef and vegetables evenly.
- Continue cooking for another 2–3 minutes until everything is heated through and well combined.
- Remove from heat, sprinkle chopped fresh parsley on top, and serve hot with cauliflower rice or roasted potatoes.
Notes
Make it low-carb by serving with cauliflower rice. For a more traditional option, serve with roasted potatoes. This dish also reheats well the next day—flavors deepen as it rests!
