  • 3 pounds sweet potatoes peeled (optional) and cut into 1-inch cubes
  • 4 tablespoons unsalted butter melted
  • 3 tablespoons pure maple syrup
  • 1 tablespoon light brown sugar optional, for extra glaze
  • 1/2 teaspoon ground cinnamon
  • salt a pinch
  • black pepper a few cracks, to taste
Optional Add-ins
  • nutmeg a dash, optional
  • fresh rosemary chopped, optional for garnish

Equipment

  • Oven
  • Baking Sheet
  • Mixing Bowl

  • Parchment paper

Method

  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, toss the sweet potato cubes.
  3. In a small bowl, whisk together the melted butter, maple syrup, brown sugar (if using), cinnamon, salt, and pepper.
  4. Pour the glaze over the sweet potatoes and stir until all cubes are evenly coated.
  5. Spread the sweet potatoes in a single layer on the prepared baking sheet.
  6. Roast for 25 minutes, then flip the sweet potatoes to ensure even browning.
  7. Return to oven and roast another 15–20 minutes, or until edges are golden and centers are tender.
  8. Optional: Drizzle an additional tablespoon of maple syrup over the roasted sweet potatoes for a shinier glaze.
  9. Garnish with fresh herbs like chopped parsley or thyme before serving, if desired. Serve warm.

Notes

Try topping with chopped pecans or smoked paprika for a savory-sweet twist. This dish also reheats well and can be made ahead of time for holiday meals.
