Ingredients
  

Chicken
  • 4 boneless, skinless chicken breasts
Coating Mixture
  • 1 cup grated Parmesan cheese fresh is best
  • 1 cup Italian seasoned breadcrumbs
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 2 tbsp olive oil
  • fresh parsley chopped, optional garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season lightly with salt and pepper.
  3. In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, oregano, and paprika.
  4. Dip each chicken breast into the beaten eggs, then into the breadcrumb-Parmesan mixture. Press to coat thoroughly.
  5. Place the coated chicken on a greased baking sheet. Drizzle olive oil over the top.
  6. Bake for 20–25 minutes until the chicken is golden and cooked through.
  7. Let rest a few minutes. Garnish with parsley if desired and serve warm.

Notes

To make it gluten-free, use gluten-free breadcrumbs. You can also use chicken thighs instead of breasts. Add a squeeze of lemon juice when serving for a fresh flavor boost.
