Method
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry and season lightly with salt and pepper.
- In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, oregano, and paprika.
- Dip each chicken breast into the beaten eggs, then into the breadcrumb-Parmesan mixture. Press to coat thoroughly.
- Place the coated chicken on a greased baking sheet. Drizzle olive oil over the top.
- Bake for 20–25 minutes until the chicken is golden and cooked through.
- Let rest a few minutes. Garnish with parsley if desired and serve warm.
Notes
To make it gluten-free, use gluten-free breadcrumbs. You can also use chicken thighs instead of breasts. Add a squeeze of lemon juice when serving for a fresh flavor boost.
