  • 200 g beef brisket or flank thinly sliced
  • 2 cups daikon radish peeled and sliced into half-moons
  • 2 cloves garlic minced
  • 2 green onions chopped
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • salt and pepper to taste
  • 5 cups water or beef broth

Method
 

  1. In a large pot, heat sesame oil and sauté the sliced beef with garlic until lightly browned.
  2. Add the sliced daikon radish and cook together for 2–3 minutes to let the flavors combine.
  3. Pour in water or beef broth and bring to a boil. Reduce heat to a gentle simmer.
  4. Add soy sauce, salt, and pepper. Simmer for 20–25 minutes, or until radish is tender and translucent.
  5. Finish with chopped green onions and serve hot. Optional: Add tofu or mushrooms if desired.

Notes

This soup is naturally gluten-free and light on the stomach. Add noodles, tofu, or mushrooms to make it heartier. Pair with kimchi and rice for a traditional Korean meal.
