- In a large pot, heat sesame oil and sauté the sliced beef with garlic until lightly browned.
- Add the sliced daikon radish and cook together for 2–3 minutes to let the flavors combine.
- Pour in water or beef broth and bring to a boil. Reduce heat to a gentle simmer.
- Add soy sauce, salt, and pepper. Simmer for 20–25 minutes, or until radish is tender and translucent.
- Finish with chopped green onions and serve hot. Optional: Add tofu or mushrooms if desired.
Notes
This soup is naturally gluten-free and light on the stomach. Add noodles, tofu, or mushrooms to make it heartier. Pair with kimchi and rice for a traditional Korean meal.
