Meatballs
  • 1.5 pounds lean ground turkey
  • 1 large egg
  • 0.5 cup grated Parmesan cheese optional — adds richness
  • 0.25 cup almond flour
  • 2 cloves garlic minced
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh parsley or 1 tsp dried parsley
  • 2 tbsp olive oil for skillet cooking
  • mozzarella or cheddar cubes optional, for melty center
Sauce
  • 14 oz crushed tomatoes unsweetened, check carbs
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional, for a kick
  • salt and pepper to taste

Method
 

  1. In a large bowl, combine ground turkey, egg, Parmesan, almond flour, garlic, Italian seasoning, parsley, salt, and pepper. Mix gently to combine.
  2. Scoop small portions (about 1.5 tbsp each) and form into 1-inch meatballs. Insert cheese cube if using.
  3. Heat olive oil in a skillet over medium-high heat. Add meatballs in batches and brown on all sides, 5–7 minutes.
  4. Drain excess oil if needed. Add crushed tomatoes, oregano, and red pepper flakes. Stir to combine, cover, and simmer on medium-low for 12–15 minutes.
  5. Taste sauce and adjust seasoning. Garnish with parsley or cheese if desired. Serve hot.

Notes

Try stuffing the meatballs with cheese or switching the sauce for a creamy garlic version for variation. Leftovers store well for 4 days or can be frozen for later.
