Ingredients
  

Meatloaf Base
  • 1.5 pounds ground chicken or half chicken, half turkey
  • 0.75 cup Italian-style breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.33 cup finely chopped onion
  • 4 cloves garlic minced
  • 1 large egg
  • 0.25 cup whole milk or creamy chicken broth
  • 3 tablespoons fresh parsley chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Topping
  • 0.5 cup shredded Parmesan cheese for topping
  • smoked paprika or red pepper flakes optional, for extra flavor

Method
 

  1. Preheat oven to 350°F (175°C). Spray a 9×5×2‑inch loaf pan with nonstick cooking spray.
  2. In a large bowl, mix ground chicken, breadcrumbs, ½ cup grated Parmesan, onion, garlic, egg, milk, parsley, salt, and pepper. Mix gently to combine without over-working.
  3. Transfer mixture to loaf pan and shape into a loaf.
  4. Top with ½ cup shredded Parmesan. Optional: sprinkle with smoked paprika or red pepper flakes.
  5. Bake for 1 hour. Broil for 2 minutes at the end to brown the top. Watch closely.
  6. Let rest for 5–10 minutes before slicing and serving.

Notes

Optional additions: grated zucchini or carrot for extra moisture and nutrition. Swap milk for cream cheese for an even richer texture. Refrigerate leftovers for up to 4 days or freeze up to 2 months.
