Ingredients
  

Base Ingredients
  • 6 cups low-sodium chicken or vegetable broth
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 1 carrot sliced or diced
  • 1 celery rib diced
  • 3–4 cloves garlic thinly sliced or minced
  • 1–2 inch fresh ginger root peeled and thinly sliced
  • 1 lemon juiced (plus extra wedges for serving)
  • 0.5 tsp turmeric powder optional but helpful
  • fresh herbs thyme, parsley or basil, chopped
  • salt and black pepper to taste
  • white wine optional, splash for flavor

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery. Sauté for 3–5 minutes until softened.
  2. Add garlic and ginger. Stir until fragrant, about 1–2 minutes.
  3. Pour in broth. Add turmeric and a splash of white wine if using. Bring to a gentle boil.
  4. Reduce heat and simmer for 15–20 minutes to let the flavors meld.
  5. Stir in lemon juice and fresh herbs. Season with salt and black pepper to taste.
  6. Serve warm with extra lemon wedges if desired. Optionally top with grated Parmesan.

Notes

For crockpot version, combine all ingredients except lemon juice and herbs in the slow cooker. Cook on low for 4–6 hours or high for 2–3. Stir in lemon juice and herbs in the last 30 minutes.
