Ingredients
  

Main Casserole
  • 3 cups cooked chicken shredded or cubed
  • 2 cups cooked rice or pasta your choice
  • 8 oz cream cheese softened
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese divided
  • 6 slices bacon cooked and crumbled
  • 1/4 cup green onions sliced
Optional Add-ins
  • 1 cup broccoli florets lightly steamed
  • 1 cup sliced mushrooms or spinach optional

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a casserole dish.
  2. In a large mixing bowl, combine softened cream cheese, ranch seasoning, and sour cream. Mix until smooth.
  3. Add cooked chicken, rice or pasta, half the cheddar cheese, bacon, green onions, and optional veggies. Mix to combine.
  4. Transfer mixture to prepared casserole dish. Top with remaining cheddar cheese.
  5. Bake uncovered for 20–25 minutes or until bubbly and golden. Let cool slightly before serving.

Notes

For a shortcut, use rotisserie chicken and microwave rice packs. To make it low-carb, substitute cooked cauliflower rice. Store leftovers in the fridge up to 4 days or freeze for 3 months.
