- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
- Gradually stir dry ingredients into the wet mixture until just combined. Fold in chocolate chips and optional marshmallows.
- Drop tablespoon-sized dough balls onto prepared baking sheets, spacing 2 inches apart.
- Bake for 9–11 minutes, until edges are set and centers are soft. Cool on sheet for 5 minutes, then transfer to a wire rack.
Notes
Chilling the dough for 30 minutes can improve texture and flavor. Store cookies in an airtight container with a slice of bread to keep them soft. Freeze dough or baked cookies for later use.
