Ingredients
  

Honey-Roasted Carrots
  • 1.5 pounds carrots peeled and trimmed
  • 2 tbsp olive oil
  • 2 tbsp honey adjust to taste
  • salt and freshly ground black pepper to taste
Whipped Feta
  • 4 oz feta cheese crumbled
  • 2 tbsp Greek yogurt or sour cream for smoother texture
Crispy Garlic Crunch
  • 2 cloves garlic thinly sliced
  • 1 tbsp butter or olive oil for frying garlic
  • fresh parsley or dill optional, for garnish

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss peeled carrots with olive oil, honey, salt, and pepper. Spread on the sheet and roast for 25–30 minutes until tender and caramelized.
  3. Meanwhile, whip the feta with Greek yogurt or sour cream until creamy and smooth. Adjust salt if needed.
  4. In a skillet, heat butter or oil over medium. Add garlic slices and cook until golden and crispy, about 2–3 minutes. Drain on paper towel.
  5. To serve, spread whipped feta on a plate, layer with warm carrots, and top with crispy garlic and fresh herbs if using.

Notes

If your carrots are thick, slice them lengthwise for even roasting. Add extra honey drizzle at the end for more sweetness. Toasted nuts can replace garlic for a crunch alternative.
