Method
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden and cooked through (about 5–7 minutes).
- In a small bowl, whisk together honey, minced garlic, soy sauce, and rice vinegar.
- Pour glaze over cooked chicken, reduce heat to medium, and stir to coat. Cook 2–3 minutes until sauce thickens.
- In another large pan, or the same one after removing chicken, stir-fry cooked rice and mixed vegetables for 3–4 minutes until heated through.
- Drizzle sesame oil over the rice and stir in sliced green onions.
- Plate the veggie fried rice and top with the honey-garlic chicken bites. Garnish with sesame seeds if desired.
Notes
Use day-old rice for better texture. Feel free to swap in extra veggies or change the protein for a different twist. Make it gluten-free with tamari and GF condiments.
