Ingredients
  

Honey-Garlic Chicken
  • 1.5 lbs chicken breast or thighs cut into bite-sized pieces
  • salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 2 tbsp low-sodium soy sauce or gluten-free alternative
  • 1 tsp rice vinegar
Veggie Fried Rice
  • 2 cups cooked rice preferably day-old
  • 1 cup mixed frozen vegetables or fresh chopped vegetables
  • 2 green onions sliced
  • 1 tbsp toasted sesame oil
  • sesame seeds optional, for garnish

Method
 

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden and cooked through (about 5–7 minutes).
  3. In a small bowl, whisk together honey, minced garlic, soy sauce, and rice vinegar.
  4. Pour glaze over cooked chicken, reduce heat to medium, and stir to coat. Cook 2–3 minutes until sauce thickens.
  5. In another large pan, or the same one after removing chicken, stir-fry cooked rice and mixed vegetables for 3–4 minutes until heated through.
  6. Drizzle sesame oil over the rice and stir in sliced green onions.
  7. Plate the veggie fried rice and top with the honey-garlic chicken bites. Garnish with sesame seeds if desired.

Notes

Use day-old rice for better texture. Feel free to swap in extra veggies or change the protein for a different twist. Make it gluten-free with tamari and GF condiments.
