Ingredients
  

Main Ingredients
  • 1.5 lb boneless skinless chicken thighs or breasts
  • 1 lb baby potatoes halved
  • 3 large carrots sliced
  • 2 cups fresh green beans trimmed
  • 1 small onion diced
Honey Garlic Sauce
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup or chicken broth
  • 3 cloves garlic minced

Method
 

  1. Place the chicken in the bottom of your slow cooker.
  2. Layer the baby potatoes, carrots, green beans, and diced onion over and around the chicken.
  3. In a separate bowl, whisk together honey, soy sauce, garlic, and ketchup or chicken broth to create the sauce.
  4. Pour the sauce evenly over the chicken and vegetables in the slow cooker.
  5. Cover and cook on low for 6–7 hours, or high for 3–4 hours, until chicken is tender and vegetables are cooked through.
  6. Before serving, spoon the sauce from the bottom over the chicken and vegetables. Serve hot.

Notes

Want a thicker sauce? Remove some of the liquid near the end and simmer it on the stove to reduce. Also great served with rice or bread!
