  • 2 live lobsters (1.5–2 lb each), split in half
Honey Chipotle Glaze
  • 1/4 cup honey
  • 2–3 chipotle peppers in adobo finely chopped
  • 1 tbsp adobo sauce
  • 2 cloves garlic minced
  • 2 tbsp olive oil or melted butter
  • 1/2 lime juiced
  • salt and black pepper to taste
  • optional beer or whiskey for a deeper BBQ flavor

Method
 

  1. Whisk together honey, chipotle peppers, adobo sauce, garlic, olive oil or butter, lime juice, salt, and pepper. Optionally, add a splash of beer or whiskey for a smoky BBQ depth.
  2. Split lobsters in half lengthwise, remove innards, rinse, and pat dry. Lightly brush with the glaze.
  3. Preheat grill or broiler to medium-high. Place lobsters flesh-side up and brush generously with glaze.
  4. Grill or broil for 8–10 minutes, until meat turns opaque and firm. Brush with more glaze halfway through.
  5. Serve with extra lime juice and lemon wedges. Enjoy while warm for best flavor.

Notes

For a milder dish, use fewer chipotle peppers or skip the adobo sauce. The glaze also pairs well with shrimp, chicken, or salmon.
