Method
- Whisk together honey, chipotle peppers, adobo sauce, garlic, olive oil or butter, lime juice, salt, and pepper. Optionally, add a splash of beer or whiskey for a smoky BBQ depth.
- Split lobsters in half lengthwise, remove innards, rinse, and pat dry. Lightly brush with the glaze.
- Preheat grill or broiler to medium-high. Place lobsters flesh-side up and brush generously with glaze.
- Grill or broil for 8–10 minutes, until meat turns opaque and firm. Brush with more glaze halfway through.
- Serve with extra lime juice and lemon wedges. Enjoy while warm for best flavor.
Notes
For a milder dish, use fewer chipotle peppers or skip the adobo sauce. The glaze also pairs well with shrimp, chicken, or salmon.
