Ingredients
  

Dough
  • 3 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 3/4 cup warm water
  • 2 tbsp olive oil
Filling
  • 1 cup shredded cheese mozzarella, cheddar, or blend
  • 1 cup diced ham, chicken, or vegetables your choice of protein or veggies
  • 1 egg for brushing

Method
 

  1. In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Add flour, salt, and olive oil. Stir until a soft dough forms. Knead for 5 minutes until smooth.
  3. Cover the dough and let it rest for 15–20 minutes.
  4. While dough rests, prepare your filling by mixing cheese with diced meat or vegetables.
  5. Roll out the dough into a large rectangle, about 1/8 inch thick. Cut into smaller squares or rectangles.
  6. Place a spoonful of filling in the center of each square. Fold over and seal edges with a fork.
  7. Preheat oven to 375°F (190°C). Place pockets on a parchment-lined baking sheet. Brush with beaten egg.
  8. Bake for 18–22 minutes until golden brown. Let cool slightly before serving.

Notes

Customize the fillings with whatever leftovers you have. These freeze beautifully — bake first, cool completely, wrap tightly, and store in the freezer for up to 3 months.
