- In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Add flour, salt, and olive oil. Stir until a soft dough forms. Knead for 5 minutes until smooth.
- Cover the dough and let it rest for 15–20 minutes.
- While dough rests, prepare your filling by mixing cheese with diced meat or vegetables.
- Roll out the dough into a large rectangle, about 1/8 inch thick. Cut into smaller squares or rectangles.
- Place a spoonful of filling in the center of each square. Fold over and seal edges with a fork.
- Preheat oven to 375°F (190°C). Place pockets on a parchment-lined baking sheet. Brush with beaten egg.
- Bake for 18–22 minutes until golden brown. Let cool slightly before serving.
Notes
Customize the fillings with whatever leftovers you have. These freeze beautifully — bake first, cool completely, wrap tightly, and store in the freezer for up to 3 months.
