Homemade Apple Pie

Ingredients
  

Filling
  • 5-6 medium apples Granny Smith and Honeycrisp preferred, peeled and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar light or dark
  • 1 tsp ground cinnamon
  • 1/8 tsp nutmeg optional
  • 1 tbsp lemon juice fresh
  • 2 tbsp flour or cornstarch for thickening
  • 1 pinch salt
  • 2 tbsp unsalted butter cut into small pieces
Pie Crust
  • 1 double-crust pie dough homemade or store-bought
  • milk or egg-wash for brushing crust
  • sugar for sprinkling

Method
 

  1. Preheat oven to 425°F (220°C). Prepare a 9-inch pie dish with bottom crust.
  2. In a large bowl, toss sliced apples with both sugars, cinnamon, nutmeg, lemon juice, flour or cornstarch, and salt. Let sit for 10–15 minutes.
  3. Pour the apple filling into the prepared crust. Dot with butter pieces.
  4. Cover with top crust or lattice, seal and crimp edges. Brush with milk or egg-wash and sprinkle with sugar.
  5. Bake at 425°F (220°C) for 15 minutes, then reduce to 350°F (175°C) and bake for 35–45 minutes, until crust is golden and filling bubbles.
  6. Let the pie cool for at least 2 hours before slicing to allow filling to set.

Notes

For extra spice, try adding a pinch of ground ginger or cloves. Store leftovers tightly wrapped at room temperature for 2 days, or in the fridge up to 4 days. Reheat before serving.
