  • 1 pound ground beef
  • 4 medium potatoes thinly sliced
  • 1 small onion diced
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt to taste
  • black pepper to taste
  • 2 tablespoons butter
  • chopped parsley optional garnish

Method
 

  1. Preheat your oven to 375°F.
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and cook until soft and fragrant.
  3. Drain any excess grease and season the beef mixture with garlic powder, paprika, salt, and black pepper.
  4. Thinly slice the potatoes about 1/8 inch thick.
  5. In a medium bowl, whisk together the cream of mushroom soup and milk until smooth.
  6. Grease a baking dish with butter. Layer sliced potatoes on the bottom, followed by some of the beef mixture, sauce, and shredded cheese.
  7. Repeat the layers until all ingredients are used, finishing with cheese on top.
  8. Cover the casserole with foil and bake for 45 minutes.
  9. Remove the foil and bake another 15 minutes until the cheese is golden and bubbly.
  10. Let the casserole rest for 10 minutes before serving. Garnish with parsley if desired.

Notes

You can customize this Hobo Casserole by adding vegetables like mushrooms, corn, peas, or bell peppers. Sharp cheddar provides bold flavor, while mozzarella creates a stretchy cheese topping. Leftovers store beautifully and taste even better the next day.
