  • 4 whole wheat or low-carb tortillas
  • 6 eggs
  • 1 cup cherry tomatoes halved
  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano or basil
Optional Add-ins
  • spinach, onions, bell peppers, mushrooms or zucchini as desired

Method
 

  1. Preheat the oven to 180°C (350°F).
  2. Lightly grease a baking dish with olive oil.
  3. Place a tortilla on the bottom of the dish as the base layer.
  4. In a bowl, whisk the eggs with salt, pepper, garlic powder, and dried herbs.
  5. Add cherry tomatoes and crumbled feta into the egg mixture. Optionally mix in spinach or other vegetables.
  6. Pour the egg mixture over the tortilla in the dish. Add more layers if desired.
  7. Bake for 25–30 minutes or until the eggs are fully set.
  8. Let rest for a few minutes before slicing and serving.

Notes

This bake stores well in the fridge for up to 4 days and can be frozen for up to 2 months. Great for busy mornings or post-workout fuel. Swap in your favorite veggies or add cooked chicken for extra protein.
