Method
- Preheat the oven to 180°C (350°F).
- Lightly grease a baking dish with olive oil.
- Place a tortilla on the bottom of the dish as the base layer.
- In a bowl, whisk the eggs with salt, pepper, garlic powder, and dried herbs.
- Add cherry tomatoes and crumbled feta into the egg mixture. Optionally mix in spinach or other vegetables.
- Pour the egg mixture over the tortilla in the dish. Add more layers if desired.
- Bake for 25–30 minutes or until the eggs are fully set.
- Let rest for a few minutes before slicing and serving.
Notes
This bake stores well in the fridge for up to 4 days and can be frozen for up to 2 months. Great for busy mornings or post-workout fuel. Swap in your favorite veggies or add cooked chicken for extra protein.
