Ingredients

  • 1.5 cups sweet potato steamed or baked
  • 3 eggs large
  • 2/3 cup cocoa powder unsweetened
  • 1/2 cup Greek yogurt plain, high protein
  • 1/4 cup chocolate chips sugar-free
  • 1/4 cup sweetener honey, maple syrup, or monkfruit
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Add all ingredients to a blender or food processor. Blend until smooth and creamy.
  2. Pour batter into a parchment-lined 6x8 baking dish. Sprinkle extra chocolate chips on top if desired.
  3. Bake at 350°F (175°C) for 30 minutes until edges are set and center is slightly soft.
  4. Let the brownies cool completely in the pan before slicing. This helps them firm up and enhances the fudgy texture.
