- Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- Mash bananas in a large bowl until smooth.
- Add eggs, Greek yogurt, honey or maple syrup, and vanilla extract. Mix until combined.
- In a separate bowl, whisk oat flour, protein powder, chia seeds, baking soda, and salt.
- Slowly add dry ingredients to the wet mixture. Stir until just combined—do not overmix.
- Fold in the blueberries gently. Save a few for topping.
- Pour batter into prepared loaf pan. Sprinkle reserved blueberries on top.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing. Enjoy!
Notes
This recipe freezes well—wrap individual slices for easy grab-and-go snacks. For variety, add a nut butter swirl or swap blueberries for raspberries or chocolate chips.
