  • 3 very ripe bananas
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 1/2 cups oat flour
  • 1 scoop vanilla protein powder
  • 1 tbsp chia seeds
  • 1 tsp baking soda
  • 1/2 tsp salt
Fruits
  • 1 cup fresh blueberries plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. Mash bananas in a large bowl until smooth.
  3. Add eggs, Greek yogurt, honey or maple syrup, and vanilla extract. Mix until combined.
  4. In a separate bowl, whisk oat flour, protein powder, chia seeds, baking soda, and salt.
  5. Slowly add dry ingredients to the wet mixture. Stir until just combined—do not overmix.
  6. Fold in the blueberries gently. Save a few for topping.
  7. Pour batter into prepared loaf pan. Sprinkle reserved blueberries on top.
  8. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool before slicing. Enjoy!

Notes

This recipe freezes well—wrap individual slices for easy grab-and-go snacks. For variety, add a nut butter swirl or swap blueberries for raspberries or chocolate chips.
