  • 1 ripe avocado about ½ cup, mashed
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/2 cup plain Greek yogurt or plant-based alternative
Dry Ingredients
  • 1 1/2 cups whole wheat flour or all-purpose
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon optional
Mix-Ins (Optional)
  • 1/4 cup chopped walnuts or dark chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment.
  2. Mash the avocado in a bowl until smooth. Whisk in the eggs, honey (or maple syrup), and yogurt until combined.
  3. Add the flour, baking soda, baking powder, salt, and cinnamon (if using). Stir until just combined.
  4. Fold in walnuts or chocolate chips if desired. Pour the batter into the prepared loaf pan.
  5. Bake for 40–45 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy!

Notes

This bread stores well for 2–3 days at room temperature or can be frozen in slices. Great toasted with eggs, almond butter, or berries!
