Main Ingredients
  • 1 lb ground beef lean
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 2 potatoes diced
  • 2 tbsp tomato paste
  • 1 can diced tomatoes with juice
  • 4 cups beef broth
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp thyme dried
  • 1/2 tsp paprika
  • 1 bay leaf
Optional Add-ins
  • 1/2 cup frozen peas added last 5 minutes
  • 1 tsp Worcestershire sauce for added depth

Method
 

  1. Heat oil in a large pot. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Add onions and garlic, and sauté until fragrant.
  3. Add carrots, celery, and potatoes. Stir in tomato paste and diced tomatoes.
  4. Pour in beef broth. Add salt, pepper, thyme, paprika, and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes, or until vegetables are tender.
  6. Optional: Add frozen peas and Worcestershire sauce during the last 5 minutes of cooking. Adjust seasoning as needed.
  7. Remove bay leaf and serve hot with bread, rice, or your favorite sides.

Notes

Hamburger Stew is perfect for freezing! It reheats well and gets even tastier the next day. For a low-carb version, replace potatoes with cauliflower.
