- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent. Stir in minced garlic and cook for another minute.
- Add diced ham to the pot. Cook for about 3 minutes to deepen the flavor.
- Add cubed potatoes and stir to coat them in the flavors from the pot.
- Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 10–15 minutes, or until potatoes are tender.
- Add green beans and cook for another 10 minutes, until tender but still vibrant.
- Season with salt and pepper to taste. Garnish with thyme or parsley if desired. Serve hot.
Notes
Frozen green beans can be used in place of fresh. Mash a few potatoes for a creamier texture or add a splash of cream at the end for richness. Pairs well with crusty bread or salad.
