Method
- Preheat oven to 350 °F (175 °C). Line two baking sheets with parchment paper or silicone mats.
- In a large bowl, cream softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract (optionally replace half with peppermint extract).
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Stir in green food coloring until dough is evenly colored.
- Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on prepared sheets. Flatten slightly to ½ inch thick.
- Bake for 10–12 minutes until edges just begin to turn golden. Do not overbake.
- Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
Notes
For a festive sparkle, roll cookie dough balls in coarse sugar before baking. Chill dough for 15–20 minutes if too soft to handle.
