Ingredients
  

Grinch Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2-3 drops green food coloring adjust to preferred brightness
  • peppermint extract optional, for a festive twist

Method
 

  1. Preheat oven to 350 °F (175 °C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract (optionally replace half with peppermint extract).
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Stir in green food coloring until dough is evenly colored.
  7. Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on prepared sheets. Flatten slightly to ½ inch thick.
  8. Bake for 10–12 minutes until edges just begin to turn golden. Do not overbake.
  9. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

For a festive sparkle, roll cookie dough balls in coarse sugar before baking. Chill dough for 15–20 minutes if too soft to handle.
