Main Ingredients
  • 2 lbs boneless, skinless chicken thighs or breasts cut into 1½-inch cubes
  • 2 tbsp olive oil
  • 1 lemon juiced
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano
  • salt and pepper to taste

Method
 

  1. In a bowl, mix olive oil, lemon juice, garlic, paprika, thyme, oregano, salt, and pepper. Add chicken cubes and toss to coat. Cover and marinate in the fridge for at least 30 minutes, up to 4 hours.
  2. Preheat your grill or grill pan to medium-high. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  3. Thread chicken and optional vegetables onto the skewers, leaving a little space between pieces for even cooking.
  4. Grill skewers for 12–15 minutes, turning every 3–4 minutes, until chicken reaches an internal temperature of 165°F and is charred.
  5. Let skewers rest for 2–3 minutes. Serve hot with your favorite sides.

Notes

Cut chicken evenly to prevent dryness. Don’t overcrowd skewers to get great grill marks. Add fresh herbs after grilling for aroma. Use thighs for better Keto skewers. Preheat and oil your grill for best results.
